Hyderabadi Tomato Chutney

Mehwish KhanRecipe by Mehwish Khan

There are some recipes that are more than just recipes...they are little pieces of home. This Hyderabadi Tomato Chutney is one of those recipes for me. It takes me straight back to my childhood and my mother’s kitchen.

This is exactly how my mom makes tomato chutney, and over the years, I have continued making it the same way for my own family.

It is tangy, spicy, garlicky, slightly smoky from the roasted cumin, and full of that delicious Hyderabadi kick.

And the best part? It goes with just about everything!

Serve this Hyderabadi tomato chutney alongside breakfast, spoon it over rice or pulao, serve it with daal chawal, or use it as a spicy side with kebabs and BBQ. Sometimes, honestly, all you need is a hot roti and a generous spoonful of chutney! 😂

A Taste of My Childhood

Growing up in a Hyderabadi household, chutneys and spicy sides were never an afterthought. They were part of the meal.

I remember my mom making this tomato chutney at home, especially when there were tomatoes that needed to be used up. The smell of garlic, curry leaves and spices hitting hot oil is one of those food memories that stays with you. Even though there are countless versions of tomato chutney, this one is special to me because it tastes like home.

I haven't changed my mom's basic recipe. The tomatoes are cooked and blended with garlic and green chilies, then added to hot oil tempered with mustard seeds, nigella seeds, fenugreek seeds, cumin and curry leaves. Everything cooks together until the tomatoes lose their rawness and the oil separates.

The result is a bold, zesty Hyderabadi-style tomato chutney that keeps beautifully in the refrigerator and makes everyday meals a little more exciting.

Why You'll Love This Hyderabadi Tomato Chutney

  • Spicy and flavorful – adjust the green chilies and red chili powder to your taste.
  • Tangy and zesty – tomatoes give this chutney its signature brightness.
  • Garlicky and aromatic – because garlic makes everything better!
  • Perfect with rice – especially matar pulao, biryani-style rice and daal chawal.
  • Great with kebabs – serve it with shami kabab, seekh kebab, boti or BBQ.
  • Make-ahead friendly – prepare a larger batch and keep it refrigerated.
  • A traditional Pakistani/Hyderabadi side dish – perfect for bringing a little homemade flavor to everyday meals.

Ingredients

  • 1 kg tomatoes – I used Roma tomatoes
  • 1 cup oil
  • 3–4 large cloves garlic
  • 6–7 Stems of fresh curry leaves
  • ¼ tsp fenugreek seeds
  • ¼ tsp nigella seeds (kalonji)
  • ¼ tsp mustard seeds
  • 1 tsp of additional mustard seeds for blending
  • 1 ½ tsp cumin seeds, roasted and crushed
  • 1 tsp red chili powder, or more to taste
  • 1/2 tsp turmeric powder
  • 1 tsp Ginger Garlic Paste
  • 1 tsp salt, or to taste

Instructions

  1. Wash and dice/chop the tomatoes.
  2. Shortcut: You can use bottled tomato paste if you're short on time, but I personally prefer using freshly boiled tomatoes. The flavor and texture are so much better!
  3. Heat the oil in a wok or large pan over medium heat.
  4. Add the mustard seeds, nigella seeds, fenugreek seeds and roasted, crushed cumin, whole button chilis, garlic sliced.
  5. Let the spices crackle and become fragrant then add the fresh curry leaves.
  6. Add the blended tomato mixture to the hot oil.
  7. Add it gradually because the oil can splutter when the tomato mixture hits the pan.
  8. Add: Red chili powder, Turmeric, Salt and mix everything well.
  9. Add 2-3 stems of curry leaves then let it simmer.
  10. Cook over medium heat, stirring occasionally. Allow the tomato mixture to cook down until the raw tomato smell disappears and the oil begins to separate from the chutney.
  11. This is also when you can adjust the salt and spice according to your taste.
  12. Once the chutney reaches your preferred consistency, turn off the heat. Let it cool slightly before serving. Your homemade Hyderabadi tomato chutney is ready!
