Cajun Chicken and Rice Skillet (Easy One-Pot Recipe)

If you love bold flavors, smoky spices, juicy chicken, and perfectly seasoned rice, this Cajun Chicken and Rice Skillet is a recipe you need to try! Made with boneless chicken, colorful bell peppers, garlic, Cajun spices, and fluffy rice, this one-pot meal is packed with flavour without requiring hours in the kitchen.
What I love most about this recipe is how simple it is. You get beautifully browned chicken, aromatic rice, and a delicious blend of smoky, savoury, and slightly spicy flavours in every bite. It is perfect for busy weeknights, family dinners, camping meals, and even a Scouts cooking competition when you need something impressive within an hour.
The secret is to sear the chicken first, allowing those golden-brown bits to add extra flavor to the rice. A squeeze of fresh lemon juice at the end brightens everything up and brings all the flavors together.

Tips for the Best Cajun Chicken and Rice
1. Brown the chicken properly.
A golden-brown crust adds colour and a deeper, savoury flavour to the finished dish.
2. Use the right amount of liquid.
Different rice varieties and pots require different amounts of liquid. Check your rice package instructions and avoid adding too much stock, which can make the rice mushy.
3. Don't skip the lemon juice.
A little acidity balances the smoky spices and buttery richness.
4. Control the heat.
Cayenne pepper can be quite spicy. Start with a small amount and adjust it to your preference.
5. Keep the lid on.
Once the rice starts simmering, keep the pot covered to retain the steam needed to cook it evenly.
Variations and Substitutions
Use chicken thighs: They tend to stay juicier and are forgiving if the cooking temperature fluctuates.
Add more vegetables: Corn, celery, or extra bell peppers work well.
Make it spicier: Add extra cayenne pepper or a little hot sauce before serving.
Add a smoky touch: Use smoked paprika and make sure the chicken develops a good sear.
Use brown rice: Brown rice needs more liquid and a longer cooking time, so it is not the best choice for the one-hour competition version unless partially cooked in advance.
What to Serve with Cajun Chicken and Rice

Recipe Details
Ingredients
For the chicken and rice
- 500 g boneless, skinless chicken thighs or chicken breasts, cut into bite-sized pieces
- 1½ cups long-grain rice, rinsed and drained
- 1 chicken stock cube, adjusted according to your rice and cooking method
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 1 tablespoon tomato paste
- 2 tablespoon cooking oil
- 2 tablespoon butter
- Juice of ½ lemon
- Fresh parsley or green onions, chopped, for garnish
Homemade Cajun seasoning
- 1 teaspoon paprika
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ¼–½ teaspoon cayenne pepper, or to taste
- ½ teaspoon black pepper
- 1 tsp Salt or to taste
- Tip: If you use a commercial Cajun seasoning blend, check its salt content before adding extra salt.
Instructions
Season the chicken
- Cut the chicken into evenly sized pieces(if using chicken breast slice it horizontally).
- Combine the paprika, smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, and salt in a small bowl.
- Toss the chicken with the seasoning and a little oil until every piece is evenly coated. Reserve a small pinch of the seasoning mixture for the rice.
Brown the chicken
- Heat the remaining oil in a large, deep skillet or heavy-bottomed pot over medium-high heat.
- Add the chicken in a single layer, working in batches if needed. Cook for approximately 3–4 minutes per side, until nicely browned. The chicken does not need to be fully cooked at this stage because it will finish cooking with the rice.
- Transfer the chicken to a clean plate.
Cook the vegetables
- Reduce the heat to medium and add the butter to the same pot.
- Add the minced garlic, diced onion and bell peppers. Cook for 3–4 minutes, stirring occasionally, until they begin to soften.
- Add the tomato paste. Cook for another minute, stirring well to release the aroma and deepen the flavour.
Add the rice and Cajun seasoning
- Stir in the rinsed and drained rice along with the reserved Cajun seasoning. Mix for about a minute so the rice is coated with the buttery, spiced vegetable mixture.
- Add chicken cube by mushing it with your fingers.
- Pour in the 1.25 cup water and scrape the bottom of the pot to release any browned bits. These add wonderful flavor to the rice.
- Add 1 tsp salt.
Simmer everything together
- After 10 min return the browned chicken and any accumulated juices to the pot. Stir gently and bring the liquid to a boil.
- Reduce the heat to low, cover tightly, and simmer according to the rice package instructions, usually around 10-15 minutes for long-grain white rice. Avoid lifting the lid repeatedly, as this allows steam to escape.
- Check that the rice is tender and the chicken has reached an internal temperature of 74°C (165°F). If the rice needs more time, add a small splash of water and continue cooking.
Rest and finish
- Turn off the heat and leave the pot covered for 5 minutes. Fluff the rice gently with a fork.
- Squeeze fresh lemon juice over the chicken and rice, then garnish with chopped parsley or green onions.
- Serve hot, straight from the skillet, and enjoy!
