Chutney is a popular condiment in Pakistani cuisine that adds a burst of flavor to meals. It is a versatile blend, often made from fresh ingredients like herbs, fruits, and spices, and is used as a dip, side, or topping to enhance the taste of dishes. This type of chutney is something a must have in a desi household in Ramadan. When I start preparing for Ramadan the first thing I make is my chutneys. The reason being all the iftaar snacks feel incomplete without them. This one is a perfect replacement for ketchup as you can enjoy it with all kinds of fried savory items and also you can add this to your chaat or dahi baray/boondi for extra flavor.

Sweet and Sour Tamarind and date Chutney Imli khajoor Ki Chutney (املی اور کھجور کی چٹنی)

Ingredients
- 1 cup Tamarind Pulp
- 6-7 Dates deseeded
- 1 tsp Coriander seeds Roasted and crushed
- ¼ cup Raw Sugar / Brown Sugar/ Jaggary
- ½ tsp Black Salt
- 1 tsp Cumin seeds Roasted and crushed
- 1 tsp Crushed red peppers
- ½ tsp Dry Ginger You can use fresh ginger chunks if not available
Instructions
- If you are using whole tamarind then soak it for 15-20 minutes in warm water. Once the tamarind softens sqeez out pulp buy using hands.
- In a saucepan cook everything for 15- 20 min with ½ cup water on medium to low heat.
- Let it rest for 10-15 minutes.
- Blend everything in a blender once the mixture cools down.
