Sweet and Sour Tamarind and date Chutney Imli khajoor Ki Chutney (املی اور کھجور کی چٹنی)
This one is a perfect replacement of ketchup as you can enjoy it with all kinds of fried savoury items and also you can add this to your chaat or dahi baray/boondhi for extra flavour.

- 1 cup Tamarind Pulp
- 6-7 Dates deseeded
- 1 tsp Coriander seeds Roasted and crushed
- ¼ cup Raw Sugar / Brown Sugar/ Jaggary
- ½ tsp Black Salt
- 1 tsp Cumin seeds Roasted and crushed
- 1 tsp Crushed red peppers
- ½ tsp Dry Ginger You can use fresh ginger chunks if not available
If you are using whole tamarind then soak it for 15-20 minutes in warm water. Once the tamarind softens sqeez out pulp buy using hands.
In a saucepan cook everything for 15- 20 min with ½ cup water on medium to low heat.
Let it rest for 10-15 minutes.
Blend everything in a blender once the mixture cools down.
