Sheer Sheer Khurma is a rich vermicelli pudding made with milk, lots of nuts, dates and sugar. The dish literally means milk with dates. Its often made during Eid.
Eid festivities are kind of incomplete until and unless you have Sheer Khurma!
I learned two different versions of it, one from my Mom and another one from my MIL. My Mom makes typical Hydrabadi sheer Khurma with roasted nuts including chirongi and serve it warm. While My MIL taught me her Mom’s recipe where all the nuts and dates are cooked for hours in milk and served chilled so sharing with you all her recipe. In this recipe I used only few tbsp of oil to roast dry vermicelli. Do let me in the comments section if you want me to share my Mom’s recipe too.
Ingredients
- ½ pack Dry Vermicelli Sivayyan
- 4 liters 3.5% milk
- 2-3 cup sugar You can increase or decrease sugar according to your liking
- 100 gm Pistachio (soaked peeled and thinly sliced
- 200 gm Almonds Soaked, peeled and thinly sliced
- 150-180 gms thinly sliced raw coconut I peel the outer brown part
- 250 gms Dried Dates Chuhaaray ( soak them overnight or run in the microwave for a bit,this Will make them easy to chop )
- 2 tbsp oil
- 2-3 Green Cardamom pods
Instructions
- Begin by boiling the milk a couple of times and then reduce the heat
- Now add the dried dates, pistachios, almonds and coconut to the simmering milk and allow it to simmer for an hr.
- Once this is done, then add green cardamoms and oil in a pan and sauté the vermicelli in it for a few minutes. Once you can feel the aroma emanating, add it to the boiling milk.
- Now add Sugar and let it simmer for another 10-15 minutes. At this point it will be very thick.
- Pour out into the serving dish or bowl and wait for it to come to room temperature before you cover it and store it in fridge.
- Now before serving add evaporated milk and serve it chilled.
