With five kids in the house and all being a cheese lover this recipe is my life saver especially when I have zero time to think before cooking. If I have two basic ingredients for it i.e. macaroni and cheese then mac n cheese it is. You can add any kind of seasonings to it to enhance its flavors. This one is the most basic recipe as we are making Popeyes copycat version. (Remember)
Tips
For cheese sauce always use freshly shredded cheese, pre shredded cheese sometimes turn grainy in the sauce.
To this recipe I used medium cheddar but you can try any kind of cheddar depending upon availability and you preference.
Both white and yellow cheddar are exactly same the only difference is the plant based food coloring agent used in yellow cheddar called Annatto. So if you are using white cheddar, your Mac n Cheese might not be as yellow as mine.
Popeyes copycat simple Mac and Cheese
Ingredients
- 500 gms Macaroni
- ¼ cup Butter
- 3 tbsp All purpose flour maida2 tbsp
- 3 cup Milk
- 1 tsp Salt
- 400 grams Cheddar cheese Shredded
- 4 tbs oil
Instructions
- Boil the elbow macaroni for 10-15 minutes (till it turns al dente) with water, salt 1tsp and 2tbsp oil. Once cooked, drain the left over water with the help of a sieve and set aside.
- Melt butter in a saucepan pan with 2 tbsp oil (this will prevent butter from burning).
- Add flour to the melted butter and make a roux.
- Remove from the stove and add in the milk gradually and whisk thoroughly. After mixing well put the pan again on a stove over medium flame and let it thickens.
- Keep it whisking with the help of a hand whisk. Once the sauce starts bubbling add in shredded cheese.
- Cook until cheese completely melts while stirring on and off (this will prevent the base from burning).
- Now add salt to taste if needed and boiled macaroni, cook for another 2-3 minutes then close the stove.
- Serve Hot and Enjoy.
