Chicken Handi got its name from its cooking style, as it is traditionally cooked in Handi (clay pot). Since we are cooking it in a regular pan the aroma which this dish gets due to that clay pot might be missing, but it turns out great anyways.

Chicken Handi
This is the simplest recipe for chicken handi.
Ingredients
- ½ kg Boneless Chicken Cubes
- 1 medium Onions diced
- 4 medium Tomatoes Chopped
- ½ tbsp Ginger garlic paste
- 5-6 Green Chilies
- ¼ tsp Turmeric Powder
- ¼ cup Whipping Cream 35%
- 1 tsp Red Chilli Powder 1tsp
- ½ tsp Cumin seeds 1/2 tsp
- 1 tsp Salt or to your taste
- ½ tsp All spice powder Garam Masala
- 1 tbs Fenugreek leaves Kasuri methi, crush them on your palm
- ¼ cup Cooking oil
- 2 tbs Butter
- 2 tbs Green Coriander leaves Finely chopped for garnish
- 2 tbs Ginger Julien cut
Instructions
- Put oil in a pan with 1 tbsp of butter,add diced onion and sauté till they turn transparent.
- Add chicken cubes and fry till the chicken changes it’s colour.
- Now add ginger garlic paste and fry for a minute more.
- Add Salt, red chili powder, cumin and turmeric powder sauté the spices for 2/3 minutes.
- Chop the tomatoes finally ( you can use electric chopper for that or use your chopping skills)
- Add tomatoes to the chicken and let it cook on high flame with open lid ( around 5 min). Keep stirring occasionally.
- Once the water from the tomatoes starts reducing and the oil starts separating, reduce heat to medium and cook for 8-10 minutes with closed lid.
- Then add all spice powder and cream.
- Cook for a minute.
- Add ¼th cup water, fenugreek leaves coriander leaves, ginger and green chilies and close the lid. Cook for 5 more minutes on low heat with closed lid.
