Chicken Handi

This is the simplest recipe for chicken handi.

Ingredients
  

  • ½ kg Boneless Chicken Cubes
  • 1 medium Onions diced
  • 4 medium Tomatoes Chopped
  • ½ tbsp Ginger garlic paste
  • 5-6 Green Chilies
  • ¼ tsp Turmeric Powder
  • ¼ cup Whipping Cream 35%
  • 1 tsp Red Chilli Powder 1tsp
  • ½ tsp Cumin seeds 1/2 tsp
  • 1 tsp Salt or to your taste
  • ½ tsp All spice powder Garam Masala
  • 1 tbs Fenugreek leaves Kasuri methi, crush them on your palm
  • ¼ cup Cooking oil
  • 2 tbs Butter
  • 2 tbs Green Coriander leaves Finely chopped for garnish
  • 2 tbs Ginger Julien cut

Instructions
 

  • Put oil in a pan with 1 tbsp of butter,add diced onion and sauté till they turn transparent.
  • Add chicken cubes and fry till the chicken changes it’s colour.
  • Now add ginger garlic paste and fry for a minute more.
  • Add Salt, red chili powder, cumin and turmeric powder sauté the spices for 2/3 minutes.
  • Chop the tomatoes finally ( you can use electric chopper for that or use your chopping skills)
  • Add tomatoes to the chicken and let it cook on high flame with open lid ( around 5 min). Keep stirring occasionally.
  • Once the water from the tomatoes starts reducing and the oil starts separating, reduce heat to medium and cook for 8-10 minutes with closed lid.
  • Then add all spice powder and cream.
  • Cook for a minute.
  • Add ¼th cup water, fenugreek leaves coriander leaves, ginger and green chilies and close the lid. Cook for 5 more minutes on low heat with closed lid.
