Pizza Pockets

  1. I’ve been making this dough for years and it never disappoints me . The only modification I did to the original recipe ( which I learned in my baking classes 20 years back) is adding cornmeal while rolling the dough.
  2. You can make them in bulk and store the unused ones in the freezer or fridge. Simply reheat then in a air fryer or over to be consumed immediately.

Ingredients
  

For Pizza Dough

  • 2.5 cups flour
  • 4 tbsp Oil
  • 1.5 tsp Yeast
  • 1 tsp Sugar
  • 1 tsp salt
  • 1 cup Fine Cornmeal

Pizza sauce

  • 2 cup Crushed tomatoes
  • 1 tbsp Sugar
  • ½ tsp Minced Garlic
  • 2 Tbsp Oil
  • 2 tbsp tomato ketchup
  • 1 tsp Salt
  • 1 tsp Oregano
  • 1 tsp Thyme

For Filling

  • 250 gm Minced chicken
  • 2 tbsp Oil
  • ½ cup Diced Onion
  • 1 tbsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Oregano
  • ½ tsp Salt
  • 2 tbsp Tomato Paste
  • 2-3 Cups Mozzarella Cheese Shredded

For Topping

  • 1 tsp Oregano
  • 2 tbsp. Olive oil
  • 1 tbsp Parmesan Cheese
  • ½ tsp Chilli flakes Optional

Instructions
 

Make Dough

  • Knead all the dough ingredients (Except cornmeal) with lukewarm water.
  • Keep covered in an oiled bowl in a warm place for few hrs or until doubled and well risen
  • Apply oil on your hands and knead the dough lightly to decrease it again to its original size.
  • Now divide it in two portions and let it rest for 5 more minutes.

Make Sauce.

  • Fry Garlic in oil for a few seconds then add the rest of the sauce ingredients. Simmer for 5-10 min on medium heat.

Make Chicken Filling.

  • Add oil in a pan, add onion, fry till they turn in to transparent, add minced meat and fry for 5-7 minutes (Until the water evaporates)
  • Now add all the spices and tomato paste with ½ cup of water
  • Let it simmer on low heat until all the water is gone.
  • Let it cool

Assemble

  • Roll out the dough onto a surface sprinkled with cornmeal and line a baking tray with it.
  • Make small holes with the help of a fork on the dough.
  • Spread pizza sauce in small portions on the rolled out pizza dough.
  • Top it up with cooked chicken and cheese.
  • Roll out the second layer of the dough onto a surface sprinkled with cornmeal and place the second layer on top of the first one.
  • Press the edges of each portion with a wooden spatula, then prick the edges with a fork.
  • In a bowl add all the ingredients of the topping and brush it on the top of the pockets.
  • Bake at 400 Degree Fahrenheit for 10-15 minutes in a preheated oven
