Since the weather is getting colder its perfect time to enjoy warm carrot halwa on chilly evening with family. Sharing my recipe which I learned from my MIL. Believe me it’s not that hard as it looks and with this method the cooking time is much less. I learned the  regular recipe (where you boil carrots with milk ) from my dad. But after I learned this recipe from my mother in law, I never went back to the other recipe. The reason being the cooking time is much less. You can start making sheera in carrot water while cooking carrots  (Bhonafication, that’s what I call it).

Tips

Always cook halva at medium to low heat.

After adding sheera , don’t overcook the carrots. This will make them chewy.

Equipment

  • 1 Carrot Grater Electric or hand grater both works fine

Ingredients
  

  • Carrot 2 kg grated
  • Sugar 2-3cup or to taste
  • Khoya 1kg
  • Ghee desi 1 cup
  • Cardamom 2 tsp
  • Walnuts as required

Instructions
 

  • Rinse, peel and grate carrots.
  • In a pot add carrots with 1cup water and heat up on high flame for 5-10minutes with closed lid.
  • Drain water by placing the carrots on sieve and pressing the carrots with spatula.
  • Pour the carrot water in a pan and add sugar. Boil at high flame till its reduced to half.
  • Now melt ghee in a pan with 1tsp cardamom on high flame and add carrots, Keep on stirring in between.
  • Cook on high flame for 15-20 min then add sugar syrup.
  • Keep stirring and continue to cook on a high flame for 5-10 min.
  • In another pan add ghee with cardamom then add khoya . Cook for 10 min till it changes its color to golden on low heat.
  • Now mix this khoya with carrots once both of them are at room temperature. Mix well.
  • Add walnuts and serve warm.
