Rinse, peel and grate carrots.
In a pot add carrots with 1cup water and heat up on high flame for 5-10minutes with closed lid.
Drain water by placing the carrots on sieve and pressing the carrots with spatula.
Pour the carrot water in a pan and add sugar. Boil at high flame till its reduced to half.
Now melt ghee in a pan with 1tsp cardamom on high flame and add carrots, Keep on stirring in between.
Cook on high flame for 15-20 min then add sugar syrup.
Keep stirring and continue to cook on a high flame for 5-10 min.
In another pan add ghee with cardamom then add khoya . Cook for 10 min till it changes its color to golden on low heat.
Now mix this khoya with carrots once both of them are at room temperature. Mix well.
Add walnuts and serve warm.
