Making oven-roasted/ air fried potatoes is so incredibly simple that it’s my go-to side dish now. I learned it from my son as he is always into Tiktok inspired recipes and now I make them as all of my family enjoy it equally. You can enjoy it as a game night snack with any kind of dip.
Tips
If you’re using small potatoes, you can cut them in half or if they’re tiny, you can just give them a little poke with a fork or knife before baking to allow the steam to escape.
While peeled the potatoes before roasting, you definitely do not need to peel them! I personally love the look and color of red skin potatoes too but my kids don’t enjoy the skin so I peeled mine.
If you don’t want to omit boiling potatoes then add extra 10 minutes in baking time.
Since different potatoes have different cooking time keep checking it while cooking with a fork.
Roasted Garlic Potatoes
Ingredients
- 500 gms Red or yellow potatoes
- 1 tbsp Freshly minced garlic
- 1/4 tsp Oregano
- ½ tsp Thyme
- ½ tsp Black Pepper
- ¼ cup Olive oil
- 1 tsp Garlic powder
- 1 tsp Onion Powder
- ½ tsp Rosemary
- ½ tsp Paprika
- 1 tbsp Lemon Juice
- 1/4 tsp Baking Soda
- Salt To taste
Instructions
- Preheat oven to 425°F.
- Scrub potatoes or you can peel them . Dice into 1” cubes.
- Now bring a pot of water to boil with baking soda. Once it starts boiling add potatoes and cook for 3-4 minutes.
- Add all rest of the dried herbs and spices in a large bowl with olive oil and lemon juice. Mix it thoroughly.
- Drain the potatoes and toss them in the bowl sf seasonings
- Mix them together.
- Place on a baking sheet and bake for 20-25 minutes until browned and tender. You can also air fry it at 400 F for 15 min (Untill crispy)
- You can enjoy it with any kind of dip or as a side dish.
