These simple cheesy chicken peri peri bites are finger licking delicious. By using air fryer I was able to make them without using any oil. You can make bunch of them ahead of time and freeze them before frying......just throw them into the air fryer whenever you want them ready.
Thoroughly wash the jalapeños dry them on a tissue paper.
Put a vertical cut on each one of them and take out the seeds and white membranous part from inside.
In a bowl, add vinegar and dip the jalapeños in it one by one for,15 min.
Meanwhile, boil the chicken cubes on stove with salt and ginger garlic paste for 10 min, keep it aside.
Take out the jalapeños from the vinegar and dry them before coating and stuffing them.
Open the cut with your fingers and fill in them with shredded chicken and cheese slices..
Roll the jalapeño in the cornstarch/ first, then dip in the beaten egg and then roll them in the bread crumbs..
Repeat the coating one more time, this time with egg and bread crumbs only so that you get a good coating on the peppers.
Press the precoated peppers between your palms to keep the coating even and freeze it for an hour.
Air fry them at medium heat for 10-15 minutes. Flip them carefully in between to evenly cook and gently brush with cooking oil.
Notes
* You can omit chicken from stuffing, if you want to make vegetarian version of it.
* While freezing, spread breaded peri bites on a tray 1-2inch apart from each other.
